Für dieses Review widmen wir uns einem echten Juwel aus Segonzac, dem absoluten Herzen der Grande Champagne. 
Die Domaine Sabourat, geführt von Jean-Claude Saunier, ist ein reiner Handwerksbetrieb: Auf 29 Hektar wird hier der gesamte Produktionsprozess von der Traube bis zum fertigen Destillat in Eigenregie kontrolliert. 
Eine Besonderheit der Domaine ist die Nutzung von sowohl trockenen als auch feuchten Kellern, was eine enorme Bandbreite an Reifestilen ermöglicht.

Unsere heutige Flasche, exzellent selektiert vom unabhängigen Abfüller Authentic Spirits, ist ein über 50 Jahre alter Single Cask Cognac aus dem Jahr 1975 (Lot 75). 
100% Ugni Blanc, abgefüllt mit punktgenauen 44% Alkohol und selbstverständlich komplett ungeschönt ohne Zusätze. 
Mit einem Preis von rund 240 Euro für ein halbes Jahrhundert Fassreifung sind die Erwartungen an dieses Premium-Destillat entsprechend hoch.

Domaine Sabourat Lot 75: 50 Years of pure Grande Champagne 
For this Review, we dedicate ourselves to a true jewel from Segonzac, the absolute heart of the Grande Champagne. 
Domaine Sabourat, run by Jean-Claude Saunier, is a pure artisanal estate: on 29 hectares, the entire production process from the grape to the final distillate is controlled in-house. 
A special feature of the estate is the use of both dry and humid cellars, allowing for a huge range of maturation styles.

Today's bottle, excellently selected by the independent bottler Authentic Spirits, is a 50+ year old single cask Cognac from 1975 (Lot 75). 100% Ugni Blanc, bottled at a precise 44% ABV, and of course, completely unvarnished with zero additives. 
Priced at around 240 Euros for half a century of cask maturation, the expectations for this premium distillate are understandably high.

Pour cette revue, nous nous consacrons à un véritable joyau de Segonzac, le cœur absolu de la Grande Champagne. Le Domaine Sabourat, dirigé par Jean-Claude Saunier, est une exploitation purement artisanale : sur 29 hectares, l'intégralité du processus de production, de la vigne au distillat final, est maîtrisée en interne. L'une des particularités du domaine est l'utilisation à la fois de chais secs et de chais humides, ce qui permet d'obtenir une immense palette de styles de vieillissement.

La bouteille d'aujourd'hui, excellemment sélectionnée par l'embouteilleur indépendant Authentic Spirits, est un Cognac Single Cask de plus de 50 ans d'âge datant de 1975 (Lot 75). 100 % Ugni Blanc, embouteillé à un degré précis de 44 % vol., et bien sûr, totalement pur, sans aucun additif ni artifice. Proposé à environ 240 euros pour un demi-siècle de maturation en fût, les attentes pour ce distillat premium sont naturellement très élevées.
