DESCRIPTION:
I had the chance to visit the Domaine of Amy and Jean Pasquet in May '23. Very lovely people and I really liked their Domaine.
In the 90s they started their organic cultivation. There are several releases of their organic Cognacs. This one, which I've tasted, is a 100% Folle Blanche from the Grande Champagne. Unfortunately there are no information concerning age or vintages they used. Let's see if organic tastes different or even better.

COLOUR:
bronze

NOSE:
Haribo Tropifrutti mixed with a pinch of wood spices. At the second smell, I have more vanilla and caramel. Unfortunately the alcohol is quite present. Missing a little bit the floral style from the Grand Champagne.

PALATE:
Refreshing (mint) and more on the dry side. Wood influence is now more present than in the nose. Dark chocolate (>70 % cocoa) with some pepper. Fruitiness from the nose is not that present anymore. Maybe some very fresh pineapple and quince jam.

FINISH:
Don't know how old this cognac is, but there is for sure a wood influence in the palate and finish. The finish is very tingly and quite long. Typical esspreso notes.

OVERALL IMPRESSION: 
For me it's a little bit to one-dimensional. Not really complex, but a nice starter for a tasting. Maybe the ABV is a little bit too high for this one.
